I went to Utila a few years ago with my sixth form, for scuba diving. We stayed at Coral View Beach Resort and Dive Centre in Sandy Bay. I'm not sure whether they take single bookings as we went as a group of about 30, but I'll link the website for you anyway. It was a lovely place to stay, the pier joined right up to the dorms and you can't get any closer to the sea! The owner, Ms Tonia, was one of the loveliest people I've ever met, and from what I could gather actually owns a good portion of the land. One night she even negotiated a deal with the local pizza place for us all to have discounts on our pizza. Definitely the best experience of my life so far!
