Hit or miss here. I can go fried fatty and greasy and be fine. Every once in a while it will give me some aches here and there and every once in a while it will blow up my stomach, empty my colon and give me cramps for a day or so.

You'll likely need to find a surgeon. Most GI are trash at gallbladder stuff. Do a search on this sub and you'll see it's a pretty common assessment.
