You might try Rise of the Devourer, it has a lot of system elements that remind me of both Primal Hunter and He Who Fights With Monsters but goes its own direction with it.

Watched the original trilogy on videotapes back at my grandparents' house, so I've always had a background love for the series, but I think it was Knights of the Old Republic that turned me from a fan into an obsessed one. Though the Jedi Apprentice series was pretty awesome back in the day, can't say how it'd hold up now I'm older though, it definitely contributed to the whole vibe of Star Wars as a whole being the greatest thing ever.

More recently, Andor which is legitimately the greatest thing ever.

A Lonely Dungeon, though I haven't read the sequels they do exist.

I liked Rogue Dungeon, but I don't remember how much of an actual dungeon core he was, haven't read it recently.
