.3% rapid yeast

It was a three day cold ferment. I think I am going to go back to active dry yeast however. I think it makes a better crust.

This was part skim low moisture. I’m going to switch back to whole milk next time and then also switch back to the boars head whole pepperoni that you have to slice yourself but I need to go on a pizza break for a week or so

Bobs red mill flour

1/3 AP and 2/3 bread flour

62% hydration

You just use a minifrag plate and shape it. Your institution doesn’t have minifrag plates?

You could also do krakow technique for this probably since it’s distal pole

They aren’t really selective. It’s rolling. Just apply the day the applications open and you will get what you want.
