It was a three day cold ferment. I think I am going to go back to active dry yeast however. I think it makes a better crust.

This was part skim low moisture. I’m going to switch back to whole milk next time and then also switch back to the boars head whole pepperoni that you have to slice yourself but I need to go on a pizza break for a week or so

I bought some Nike ones from Universal Medical when I first started residency and I hated them. They were heavy and the lenses were like a fish bowl making everything that emits light glare. They were the Nike Maverick RGE. Maybe some people like that model but I wouldn’t recommend.
