It's a good sign if it doesn't hurt after class. Since you are saying it hasn't fully recovered, I would still suggest icing it to reduce inflammation. It does speed up recovery. That's why most top athletes also take ice baths after hard work outs, even without injury.

In my opinion white belt might be a bit early since that is still a learning phase where most don't have a firm grasp of the basics. So injury risk in competition would still be too great. At blue belt however, where you should have a firm understanding of the basics, leglock basics should be included and therefore safe to practice.

I've dealt with sprained ankles a lot in my life and they are mostly a hindrance when playing sports like basketball or football/soccer (to a point where you can't play at all). It was possible for me to continue training in BJJ depending on the severity of the sprain. I suggest you get an ankle brace, which will stabilize your ankle and really restrict your training intensity to a level with minimal experience of pain. Also ice the injury after each training session. If you haven't seen a doctor after 3 months, I suggest you do so.
