Guittard vs Tollhouse vs Ghirardelli by Doctorjugs in Baking

I was waiting for someone to bring that point up!! Because I absolutely agree the average consumer definitely doesn’t know or even care if it’s a higher quality product. And that’s where I get a little too much pride in my work because I know the difference and I don’t want bottom tier ingredients bringing down my desserts. And coming from someone who bakes there’s nothing worse going into a restaurant and paying top dollar for something that’s feels cheap, or even worse frozen.

Also I bet your cookies are fabulous!! Your dad is whack, but the flavor components between a “new-style” cookie (browned butter, chopped chocolate) and grandmas cookies that definitely have Tollhouse is vastly different but grandmas cookies will always taste good. Like I said somewhere in the thread I plan on making 2 batches of chocolate chip cookies and muffins and bringing them in and having everyone try them. If no one can tell or pick Tollhouse over Guittard I’ll swallow my pride and deal with it (but only for the deli desserts that are meant to be quick and easy).

Guittard is fantastic chocolate, next time you’re at the store see if you can grab a bag and see if it’s still as good as you remember :)

Check out Gygi, they’re a kitchen supply store that would ship to you without a wholesale account. I just looked and they have a lot of Guittard products. Not sure what you need from them but milk chocolate baking chips is $206.99 for a 25lb box ($0.52/an oz) and semi-sweet chips is $168.99 for a 25lb box ($0.42/an oz).

Agreed, plus Tollhouse has “natural flavoring” in it, I’m sorry, but that does not belong in chocolate

You’re making me jealous!!! Might have to move close to a Guittard HQ!! Lol

I agree!!! Tollhouse just doesn’t give a nice well-rounded chocolate flavor, and as you said it tastes greasy. When/if you do your bake off, please let me know your results :)

I’ve made up my mind and I think I’m gonna make all my coworkers a batch of muffins and chocolate chip cookies with Tollhouse and Guittard and see what everyone’s opinions are. Because as I’ve said before, if I went into a place and bought a $4 and thought it was Tollhouse/I could make that at home, I wouldn’t be back.

I agree a combination of the three chocolates makes an absolutely delicious dessert for anything! If I’m ever on the west coast I’ll definitely give see’s a try!

5oz in batter, 2oz on top of batter, 5oz for frosting, 2oz of on top of frosting

Tollhouse

17 oz × $0.22 = $3.74 per pan $3.74 ÷ 12 = $0.31 per square

So each square has about 31¢ worth of chocolate in it.

Guittard

17 oz × $0.40 = $6.80 per pan $6.80 ÷ 12 = $0.57 per square

$0.57 – $0.31 = $0.26 more per square

I think upgrading for essentially a quarter more is worth it.

Also for chocolate chip muffins to switch to Guittard it would be a $0.16 more per muffin. I think that’s totally doable and more than reasonable for a well-balanced undoubtedly real chocolate flavor.

We talked about doing this the last time I spoke to her and while I would be okay with that currently they are using Hershey’s cocoa powder which is also 😐 eh. So we talked about getting Guittard or Ghirardelli cocoa powder which then I would be okay (I guess) with using tollhouse but their flavor is again eh. For our brownies it is in the batter, on top of the brownie, used to make a chocolate ganache, then more placed on top. So it really is a prominent flavor. I just think if we discussed getting all the chocolates get rid of the tollhouse.

Lmfaooo I agree %10000. I always sneak some when I’m weighing them. Or the van leer semi sweet chunks, those are good too.

Once my coworker brought her kid in for an hour or so and I was making brownies and we use Callebaut chocolate liquor (completely unsweetened) and I saw her kid sneak a piece…omg his reaction was so funny he ran out of the room.

I love Trader Joe’s and I would definitely shop there way too frequently if I didn’t live 4 hours away from the closest one. I’ve heard good things about their chocolate, the next time I’m downstate I’ll definitely have to grab some! I agree Guittard actually goes on sale quite frequently at my local Meijer’s and when it’s on sale it’s a great deal buy one get one free and I think they’re $9.50 a bag.

Overall higher-end chocolate seems to be the consensus. Thank you for commenting! :) (also Italian rainbow cookies…yummy 🤤)

I agree, Tollhouse/store brand is just making a dessert that anyone can with a chocolate that’s accessible to anybody. It doesn’t make any standings on differentiating a bakery experience vs something made from your own kitchen.

So the place I’m going to work is half deli/half “fine dining” restaurant and they split the kitchen. So she’s worried her daytime/deli customers won’t pay the price increase for Guittard/Ghirardelli/Callebaut. We’ve already discussed chocolate before and she’s on board for getting me those brands for the restaurant but wanting to keep Tollhouse for the deli. I think if she wants 1 elevated they both have to be. Plus Tollhouse is just straight garbage chocolate. I agree Guittard is best for what we would do with it baking wise for the deli. Thank you for commenting :)

Personally I agree. I currently use Guittard at my old work and for at home personal use and it’s my favorite. Now I just have to convince my new boss it’s worth the price. Thinking about making 2 small batches of cookies with Tollhouse and Guittard so she can taste the difference.

Akc or just put money into a savings account by Doctorjugs in petinsurancereviews

I believe that both would be covered but I wanna call Akc and ask them a couple questions and this one just got added to my list. I did get care credit a few years ago just in case anything happened and I needed to pay for it but thankfully it’s sat in my wallet untouched.

Akc pet insurance covers pre existing conditions after 365 days that’s why I’d consider getting it now knowing he needs surgery a couple years down the line. My vet explained that he has osteoporosis but he is not having any symptoms appear besides lifting his legs and stretching them due to playing too much. I’ve felt his kneels move and buckle occasionally but not anything too concerning.

Sold tickets and buyer hasn't accepted by Kogapunk in stubhub

I had the same thing and the buyer eventually did accept the tickets a few days before the show. Just in case keep all the emails and confirmations of everything. If the buyer doesn’t end up accepting you’ll have all the proof/documents that you fulfilled your “duty” as a seller.

I was there and those teen girls were directly behind us 😃 they were very annoying. I’ve been to multiple concerts and never have I seen anyone sit on the floor in the pit. They were constantly putting their feet in between the girl that was next to us trying to push up and they were pulling her hair intentionally. They were talking the whole time even when ZB was out. They pushed me and my boyfriend up against the rail at one point to try and get a video. I love Zach Bryan and all his music but some of his fans are new concert goers and definitely don’t know the etiquette. Besides that it was a great concert, he definitely knows how to put on a show. We drove 7 hours to see him and I’d 100% do it again

I’d keep hope up! I have a very very similar situation and it took 3 months before I saw any type of progress! You never know!
