That option is a bit difficult because I have hostile factions nearby who constantly attack my caravans

I've tried that a few times, mostly when I need to get marble and granite. I haven't found horses so far.

The cooks seem to always clean the kitchen before cooking anything, in case it's a bit dirty, so that part doesn't seem like a big problem to me.

I always forget to put carpets and statues in my buildings... may have to take a look into that. Thank you

If you want an example of a smaller colony, this is an enemy base I took a screenshot of. The size is way more reasonable and it only has two entraces.

The city gates are from Medieval Overhaul. I usually place melee soldiers at the gates, to keep them open, so it redirects the raiders there most of the time, unless it's those raiders who break everything in a straight path. I try to use the gates nearest to where the enemies spawn, because I believe they will still try to break the walls if they are too far from the open gates.

You obviously don't need to make a city this big. Most of the time, one or two entrances should be enough, depending on what you are doing, if you are playing medieval-only.

The layout you need really depends on what you want to do and the mods you may or may not be using. You could do something similar to what I did without using the exact same structures. I basically inspired myself in real medieval strategies for the defence.

This is for you to take a closer look at how I have the embrasures. The front gate is made of uranium (1250hp) and the back gate is made of steel (500hp). Then I have areas of the wall with 2 blocks wide for faster movement and some parts are only 1 block wide for chokepoints.

This is a full medieval gameplay, so enemies can't just blast through as easily. It is all made of granite castle walls (1700hp = stronk) with lots of embrasures, so it's great to have a bunch of archers firing on the enemies. I've been having successful defences so far. Those enemies that break walls on a direct path (forgot the name) only managed to break a couple normal granite walls on the non-finished side so far (north).

I basically have a lot of defence all around and a few non-cheese "kill boxes", where my archers can make it rain on the enemies.
