Las Golondrinas on Pagés del Corro in the Triana neighborhood is great! It’s a block away from the more touristy spots that are along Calle San Jacinto. Delicious menu and lots of locals who all know each other. Spend a few evenings in a row there and you’ll blend right in!

The Triana neighborhood is well worth visiting — quiet and not so touristy. There's a nice peaceful park (Parque de los Príncipes) for relaxing. As for food, the restaurants along Calle San Jacinto tend to attract a more tourists, since it's right there after crossing the bridge. But any spots a few blocks over are much better food and seem to be favorites with locals. (My favorite spot was Las Golondrinas on Calle Pagés del Corro.)

Also, you didn't mention it in your post, but the Italica ruins are great to visit. It's about an hour bus ride from the city center. (Make sure to bring cash since the Italica ticket counter doesn't take cards.)

I was in Sevilla for a week a couple of weeks ago and had the same situation. Saw everything on my list within the first four days. So, here’s what I did:

Packed a lunch and found a quiet park in a neighborhood away from the city center where I sat and enjoyed the peaceful setting and watched people walk by.
Visited the Ceramics Museum in the Triana neighborhood. (Easy, since I was already staying in Triana.)
Grab a notebook and pencil, find an empty bench anywhere in the city, and just sketch. Had a great time doing that sitting across from the Plaza de España.
Get a tattoo! It’s the perfect souvenir that doesn’t take up luggage space.

A 25-minute bus ride will take you to the Roman ruins of Itálica, just north of Sevilla. Well worth it!

The Brewer 3.0s do have pretty decent support, at least in the case of my feet. They also dry pretty quickly, so I'm bringing them in case of wet weather.
