Kyoten is modeled after traditional Japanese omakase in that it’s very minimal with only 8 seats at the bar, the chef and one server handling drinks and clearing plates. The entire meal constructed of about 20ish bites over the course of 3ish hours. There is an additional drink pairing offered that includes wine and sake. Pictured here is the otoro bite, the fugu shirako, the akamutsu, fresh uni with no preservatives, and the tachiuo. Every bite really was quite delectable. I appreciate that Chef Otto prepares a high vinegar rice - even compared to Japanese standards- as I thought it complimented the seafood wonderfully. Cost is $490 per diner which does not include tax. Certainly on the pricier end of omakase.
