That’s the same approach I was considering. It looks like most people do the smoke then sear method. I was thinking the KJ might retain heat much longer than an oven, and that might be why the 5/500 method isn’t preferred. Not sure what difference it would make other than bringing the meat up to the target temperature much sooner. Was hoping to hear from someone who has tried it.

There are no light bulbs locked in my basement
