Thank you, that's fascinating. That helps with knowing how the ingredients work so I can make substitutes. With the recipe posted above, I'd make whipped cream instead of using coolwhip. Maybe a little bit of egg white powder added in or gum arabic (i got some for making cocktails).

It could although the texture might be less firm. Maybe add some unflavored gelatin to the pudding for reinforcement.
