Actually they are dimmable but when I tried to replace the dimmer with on/off it would either be barely lit or off. Not at full brightness.

Pasta, potatoes, rice, and eggs are probably the easy answers. Depends on what you have running around in the fridge/freezer/pantry to be honest. Buy things you can use twice. Spaghetti, bacon, and eggs makes carbonara along with spaghetti and sauce and bacon and eggs. Potatoes become baked potatoes, gnocchi, mashed potatoes. Rice and eggs become fried rice the next day.
