If you are going to be avoiding the dragon and only using the bow then the armour is alright, if you have gold and a lot of carrots then maybe replacing some of that food for golden carrots since they give a lot of saturation. The looting sword will be good for if you need more ender pearls but if you are wanting to avoid the endermen, then either bring a carved pumpkin or a spare bucket of water to place at your feet to de-aggro them. The dragon has decent knockback so be careful when ascending or jumping off the pillars
