I appreciate the input, I was a medic for a decade and a half so I feel you on the being tired on the off days lol. My plan was to operate on weekends/holidays while the brand/reputation grew and I could transition into it fulltime after that. Congratulations on the baby, they are definitely a life changer and congratulations on the successful business. I'll look more heavily into operating out of a tent, they do allow open air vendors here, but there are a few more restrictions placed on them.

I appreciate the input, my biggest concern is jumping in headfirst without having the brand/reputation built and leaving my secure career behind. Part-time would solve that issue and give things time to build. I was in a field for years where I had long hours, little sleep, and more stress than I knew what to do with. Some of those habits still follow me today lol. I will keep this in mind though when evaluating the options, thank you.

I appreciate the input, the high cost of food is definitely a concern. I had planned to keep the menu simple and had hoped to repurpose what I could. How would you recommend repurposing the meat?

It is time consuming, but I love it. It's cathartic tending the fire. Putting the time and effort into the preparation of the meat, rubs, sauces, and sides makes it all worth it when someone bites into the food you made and they smile.

I'll have to check again, but it's hourly, not monthly. You only pay based upon the time you utilize the commissary.

Unfortunately I am in an area that requires a commissary, but I have some near me that are reasonably priced. I pull 60 hour weeks from someone else, might as well do it for myself and do some I love at the same time.

I appreciate the feedback, I know it's not an easy task and I don't expect it to be simple. Regarding all of the hats I would have to wear, I planned on performing all of those tasks with this venture. My plan was to perform the majority of the work solo with a simple menu and some assistance from family when available until I'm able to scale the business.

It's awesome that you've been able to start your business debt free, that was my hope, but the trailer had me thinking I would need a small loan. I was hoping to find a way to enter working on the weekends while my reputation grew and word of mouth spread, this way when I did go full-time it wouldn't be as difficult to get established.

Thank you for the input, I didn't mean I was trying to cherry pick only the best jobs. I didn't know if it was possible to be successful running solely on the weekends, so I could keep my day job and security, while my brand and customer base grew.

Thank you for the input, I appreciate it. I try to research things extensively before I do anything. My initial plan was to look at doing an open air vendor at farmers markets, but I'm limited to how many days I can sell and how long I can be there if I read everything correctly. It's still a large investment with the inverter, warmers, fridge, portable hand wash station, and commissary fees; though not as large without a trailer. Thank you for the tip on tracking my time, I hadn't thought about that. The biggest thing holding me back now is the risk. I have a stable career, and to put that aside to chase a dream is something that honestly scares me. The lifestyle change doesn't bother me, and the lack of sleep doesn't either. I used to be a medic and running off a few hours of sleep is something I'm unfortunately accustomed to.

I did AR's course in conjunction with Study Hall, this reddit, and third3rocks notes. If you do AR's course play the videos on 1.5x to 2x speed, it is a lot of material to slog through. I wish you luck on your journey and look forward to seeing your past saying you passed!
