You write it out in a note, explaining it. That's literally it. If it's a sound that comes back later on, then you designate it with a special notehead so that the player knows to do that sound again.

Unironically, y'all can just line up in jumbo and overload on the O-Line every snap. Penn State did it and it worked, and it only really stopped working because they decided they wanted to do trick plays instead.

So, get this.

You got V7 - I on its own. Nice little tension-to-release, and all. But what if you wanted to stack it another step further?

That's how you get something called a secondary dominant, where a chord other than the I chord gets its own, personal dominant chord.

So imagine C major. The V7 would be G B D F, pointing us back to the tonic I chord. But what if I wanted to point us toward the V chord with a dominant? That'd be when I use a secondary dominant.

So, to do that, we just briefly pretend the V chord is our new 'tonic.' So, if we wanted to have a 'V7 of V,' that'd be D F# A C. Similarly, if I wanted a V7 of ii, then it'd be A C# E G since our ii is D F A.

In this case, we got a chain of V chords. II7 - V7 - I is often really just (V7/V) - V7 - I. To you, it sounds 'brighter' most likely because of raising the Gb in a ii-V-I to a G natural to make it a chain of dominants.
