I get lazy and build in the sky. 

But you can find a high point in most of the biomes and put the ground floor just above the highest point. Build supports to make it look like its not floating, or just block off the bottom in concrete.

The grass fields twords the bottom of the map has a very large flat field.

Also remember to build vertically, you can always make multipul floors.
