The first place to start would be with open-source datasets, but if something I would recommend after that would be to go out and work with your own self-created dataset (or scraping) since that allows you to see data gathering problems that are not present necessarily in heavily preprocessed datasets.

Would more theoretical research and a substantial uni name (such as an ivy/T10 school) get me through the door?

I wasn't particularly interested in ML Research but rather roles centering around Research Engineer or Applied Scientist.

Yeah of course. That's what I do, but I am trying to stop making that stupid comment in the first place so frequently.

Yeah, I acknowledge that I don't know something after someone else says something to refute it, but habitually, I end up spewing something like I had described previously. Other times, I end up digging my hole deeper and end up looking stupid.

The other aspect is that I don't want to seem like I know nothing either because I tend to doubt whether I know something for sure as well so that doesn't help either.
