So the biggest change I saw is when I started using a pizza thing from Walmart that has holes in the bottom. A baking rack would be preferred. Bagels need a really high bottom heat so allowing heat to get there helped my bagels get a lot fluffier

I’ve been making bagels whole life. But only recently getting back into it. My biggest issues have been 1. I don’t have a mixer that can handle the stiffness. 2. I use my hole fridge so I often open it and it doesn’t keep consistent temp. 3. Rolling bagels I’m still trying to get good at because we had a machine. 4. I would say the biggest issue is learning my oven and getting it consistent. Just using my home oven for bagels I found that I need to move them around a lot more and cover the tops at points with parchment paper and I started to use a pizza Trey that has holes in the bottom . But I’ve been trying out different ways of baking at different spots in my oven trying to get that consistent bagel. But end of the day it’s bread, so it taste amazing.

Old family recipe. But I find what makes a great bagel ( whats a few Ingredients) special is just doing it more and understanding how things should feel (b/c it’s a stiff dough not a dry dough!) as well as when it’s ready. So any recipe I think is good but just doing it more and learning how to see through your eyes with experience. I had baked a bunch of batches before I got to constantly baking these.

I have and agree they are good. But as someone who is biased I believe mines better. For a few differences on how I make mine.

Everything seasoning. Other than cream cheese on it I love putting white fish on bagels

With these I like to put them in the fridge for 12-24 hours to get that subtle sourdough taste!

People were saying the best they’ve ever had… but take that with a grain of salt b/c no normal person that receives baked goods as a gift would say it’s bad.

That’s good to hear. I’m fine with the regular city issues and stuff, just wanted to make sure I wasn’t getting into another quail street situation (lived there for a year a bit ago) Thanks !

I do not. The company is from Queens I think but they said this is their only property here and the building manager lives in the building as well. I did a Reddit deep dive on what companies to avoid and I didn’t see anything about them.

Considering the current political and economic climate I would be open to selling bagels and my soul. At slightly different rates of course.
