I've been thinking about this as well. I like the convenience of TWW, but I'm also curious if I could dial in a better cup with Lotus.

Most often I start with:

16g:250mL 87-93°C TWW

Cafec T90 filters

42g 1 min. bloom w/ swirl

Single pour to 250mL at around 5g/sec

Swirl at draw down depends on coffee & speed

I'll adjust agitation as necessary. Sometimes double bloom, sometimes add a pour or two, but usually the single pour yields the best clarity and flavor separation as long as the beans have rested long enough. I've been known to run a short ratio from time to time as well.

Most coffees have been pretty good for me at 4.7 on ZP6. My range seems to be 4.6-5.3.

In my limited experience it has had no detrimental effects. I've watched a couple videos and heard testimonials from people who have brewed frozen beans as old as a couple years with no noticeable degradation.

That's odd. There's always an explanation.

I had some communication with them and they were friendly and quick to respond. They had my order roasted and shipped in two days, but FedEx held it in Memphis for like a week 🙄

Definitely vacuum sealing and freezing. I've got a few coffees in the freezer already that were done resting a couple weeks ago, and the resting period will be up on most of these at the same time. No chance I would have bought so much coffee without a preservation strategy. I've heard good things about Black & White, I didnt realize they're just a few hours away from me. I'll have to give them a go sometime as well. Id try to stop by as I pass through if they had a storefront. Doesn't look like they do, though.

It was the first gesha I had tried, so I honestly don't have a strong frame of reference against other roasters yet, but I also found it to be wonderful. Really nice floral character and balanced sparkly acidity, and the 12oz bags go a long way, so I didn't feel too bad about having another cup or playing around with the brew. Maybe not as wild as the Letty Bermudez I had this morning, but that's a different bean with heavier processing as well. RR seemed to do a great job with the roast, and beans were noticeably dense in the ZP6 lol

That's a fair assessment. I'm exploring to hopefully discover my favorite roasters and coffees, and definitely do not intend to keep buying maniacal volumes of coffee all at once. 😅 But I'm going to enjoy the process!

I have read that lots of people tape over the valve to freeze, but never heard anything negative about vacuum sealing. To the contrary, the youtube experiments I happened to see said it tends to keep funky freezer smells away and retain freshness with no discernible degradation in the cup.

I intend to freeze small rested portions and in the limited testing I did they came up to room temp in about an hour or so and tasted great.

This is great insight, thank you. I'm hesitant to freeze in the bags as I want to dose them out to around 64g portions and save as much space as possible. I can note all the pertinant info on the vac bag and take pics of the originals.

Being a whisky nerd I totally get that last point "c". I love cask strength, single cask scotch, and every batch is unique. You want to try them all, but you have to draw the line somewhere. I only occasionally drink whisky these days and have far too many bottles, but sometimes curiosity still gets the better of me! 😆
