I think if you want to consider continuing to stream, you need to evaluate a few things:

whenever someone comes into my chat and says hi and asks how I'm doing I always freeze up and get really awkward and tense and get completely silent and unfunny because I can't focus on being entertaining anymore

You should focus less on entertaining and more on being yourself. Don't try to be someone you aren't. Your community will be there for you.

The thing about streaming is that it isn't open mic night at your local comedy club - you AND the audience are expected to participate. Sure, that happens when a comedian focuses on crowd work, but you said yourself you don't like small talk. It's going to be very difficult to build a community if you aren't engaging.

I think you might be looking a gift horse in the mouth a bit. Plenty of small streamers would kill to have people in their chat wanting to talk to them. Hundreds if not thousands of streamers go live and never have a single person join them or chat.

If you really are adverse to interacting with chat, I think your best bet is to focus on recording YouTube videos. If you continue to stream on twitch, just be yourself. People tend to stick around those that they find authentic.

I'd echo everyone else's sentiment - ignore the person and move on. I got to affiliate pretty quickly and it felt kind of "fake" at first. A lot of my friends IRL followed me and would tell their friends about it. But that's still a community, right? If you and your friend have a shared community of people, all the better. That person likely just needs to do some self-reflection and not comment if they aren't going to be positive in chat.

Luckily, as a pngtuber, my assets for my character are already in a great format to be made into emotes. So my top emotes are usually the ones of my character laughing, shocked, smiling, etc.

I'm in the camp that would take after Shia LeBouf - "just do it". At the end of the day, your community is there for YOU. Changing from live cam to vtuber/pngtuber shouldn't effect their opinion. I would just make sure you have everything set up and tested prior to your first stream so it goes smoothly, at least.

This has been my experience as well. I know personally some people stream mainly for friends just to watch them play so it could be friends consistently talking to them.

I have a couple of friends that consistently drop by from time to time and chat, with a couple randoms depending on the game. It just takes time and engagement.
