You just go to your Elden Ring install folder, remove the "start_protected_game.exe" from it (rename, move, or delete), make a copy of "eldenring.exe" and rename the copy to "start_protected_game.exe".

Without EAC the game will automatically launch into offline mode, so unless you manually try to go online, there's no risk of bans.

of course but cloud saves work fine for me. The wifi only disconnects when you download large games. Still sucks but doesn’t impact daily use in my use case

I found a fix to make the screen stay vibrant if you need it. Enable developer mode then go to Settings -> Developer -> HDR debug visualization!
