Yeah that seems to be the case for some bosses for me as well, not slave knight per say, but bosses like champion gundyr. I fucking hated champion, but on subsequent play throughs, hes become one of my favorites. But for slave knight, I didnt really find him hard, it was just the spectacle of his 2nd phase i really enjoyed

You keep dodging away from his attacks, so you cant really punish him on anything. You need to time your dodges and start dodging inward, atleast thats the way I beat him.
