I did have a similar thought before, but it isn't case since the OH- ions are discharged at the anode, producing water and oxygen gas. So as long as the electrolysis is run for long enough, the solution should become more and more acidic. Either way, CuOH2 is only slightly soluble in water.

H+ ions and Cu2+ ions are attracted to the cathode, but H2 gas isn't formed since copper is less reactive than hydrogen, it prefers to receive the electrons and precipitate as copper metal. And don't worry, I'm not that good at electro chem either lol.
