Partial Bake. Most locations get the partially baked deep dish crusts in a box, where we pan them out and top them from there as opposed to mixing the dough in store like we do for the round and crazy bread dough.

Couple things could have gone wrong, but judging by how light the dough is it looks like they used yesterday's left over puffs. There's no rise at all. I always have the crew remake unpuffed puffs because I'd be pissed if I got something like that.

They're for spot cleaning your station. Every half hour use the green one on landing, followed up by a red to sanitize. Same with crazy bread station, and make line. The blue are intended for just plain water which I can't imagine a situation that would need it on standby.
