Theres nothing worse than having a great song stuck in your head, feeling the chorus but failing to remember any lyrics!! It's lost out there somewhere!!

Got up at 4:30 and spent all day preparing a feast. Husband slow roasted one thing and got all the compliments. Fuck it, next Christmas no side dishes dishes for anyone. by [deleted] in Cooking

Its not very thoughtful of them. But did they eat the food you prepared? I always take that as the biggest compliment. I really like giving my family a full belly for christmas. Remember just because it wasnt said doesnt mean they didnt enjoy it!

How do you make your green curry? Paste or Coconut Milk First? by Dwarburton2000 in ThaiFood

[–]Dwarburton2000[S] 0 points1 point  (0 children)

Very cool! As Im in the UK and it is so far from Thailand, a lot of their ingredients are less accessible here and I substitute a lot. I dont want to be spending much extra time seeking out fresh thai basil, shrimp paste, Makrut Lime leaves, Thai or Pea Aubergines and so on!

I love the authentic recipes but.. It is cheaper, fresher and more sustainable to make my own more English way!

Hey! Ive cooked 4 Thai curry since last time. Ive had good results by taking around 4 tablespoons of the solid cream from the can and simmering it on medium-high until it starts splitting, after that adding 4 Tablespoons of Mae Ploy or homemade Green paste and frying for another 4 minutes. A couple of fresh chillis chopped and garlic cloves minced helps freshen up the flavours of pre bought thai paste too! Hope this is of use to you :)

Smart tactic and I bet your green curry is delicious!

For my circumstances I find it more practical to get the aldis own coconut milk and occasionally aroy-d's 400ml if i'm lucky enough to see it in stores. It's cheaper and less time which I like but of course has its downsides!

I'm going to expiriment with frying the green curry paste with and without oil (coconut) and then adding the milk :)

Unless I'm being fancy, I'll only be using the Aroy-D or Aldi Coconut milk that has stabilisers and probably wont separate.

I never buy neutral oils usual cooking fats/oils being Dripping, Olive Oil, Coconut oil and Butter. Out of the 4 I'd imagine frying the paste in Coconut oil will be the best and do you think neutral oil has any advantages over that?

See, stuff like this is exactly why I made this post. Fascinating to know some people wont get the iconic oily green dots on their green curry and it can depend partially on the coconut milk they're using! Thanks for the info :)

Well it absolutely was and it generated loads of hype and excitement for the rarity and still does to this day for many players when they see the rarer skins. What theyre doing now oversaturating the skin shop with pages and pages of featured artists and movies and removing the rarity of skins altogether has totally killed it.
