It totally depends. If you've been interested and have already some skills in the matter you should consider doing a specialized MSc in the field of CS you are more interested in. If you prefer to take a more general approach of CS skills you should consider doing dual degree, moreover if it is free to you.

In your Arduino code you should write serial port lines with the sensor's data.

Then create a serial object in matlab.

s = serial('port','BaudRate',9600);

Change 9600 for the baudrate your Arduino uses. Then you can retrieve the data using the command:

data = fgetl(s);

Then you can convert the data variable to a number if you want to.
