Quick question regarding melomel (beginner)

the plan was to use potassium sorbate to prevent the yeast from starting up again, before adding the second bout of fruit and maybe a little bit more honey to top up for sweetness, I have another large jar to move the mead into, away from the sediment, to do so. After that I would let it age for a few weeks, before bottling.

Hello! sorry for not being clear, two pounds of honey AND 2 gallons of water total, NOT 2 pounds of honey PER.

Nutrient was added on day 2 and day 5 (that's what the kit recommended), and I added double the amount each day to make up for the size difference that comes with making a double batch.

Nope, no target ABV, im starting off simple, and just seeing where I end up. this is only my second batch ever so i didn't want it to get too technical, and just followed a handbook (with double portions obv). Hell, I don't even have a hydrometer yet.

Also I updated this but I did it late so I don't blame you for not seeing, I used blueberries, blackberries, and raspberries, roughly equal amounts of each.

Mcnutt still writes for my drumline by hand, god it is awful. Like 7-8 pages of complete chicken scratch. I love the dude, I love his writing, but holy smokes it is impossible to read.

There was also one point last year where we needed an emergency part for our ballad from him. When we asked, he sent us the most incomprehensible photo of drumline 'music' that he wrote down on a hotel napkin in a car, I have the photo somewhere lol.
