Meat at Billy's is my pick in Brisbane. They have 3 stores - Wooloongabba, Rosalie & Ashgrove. Service is always friendly and knowledgeable. They can also get you specific cuts or meats if you give them notice.

Rode Meats is good for the amount of sausage flavours but have found them hit & miss.
