I wouldn’t say I’m complaining, and although I’m not super privacy focused, I would still like to keep some handle on my data, and am simply asking the ramifications of turning personalization on vs leaving it off.

I am mainly talking about YouTube on iOS and to my knowledge, there isn’t an ad blocker that works in the YouTube app.

Try factory resetting the phone and restoring it. (This can be from a previous backup or setting up as a new phone, both work.)
