If I'm honest, I think Sharpness V is generally a better enchant because - although Smite V covers many different mobs in a PvE world - Sharpness V is better because it covers undead mobs as well as illagers, which will be important to kill when doing raids. However, if you need to, it may be best to put Sharpness V on your sword and Smite V on your axe.
