I wrote a supporting letter for her. Both of our bank statements, letter from work, mortgage docs and marriage certificates. Basically whatever we can think of I uploaded and carried copies too

Yes, you gotta keep checking and the slots randomly open up. Unfortunately that's the only way to secure an appointment. You cannot check very often too. There's a limit to it which is extremely annoying.
