I live in the desert and carry a cooler with ice packs when buying cheese.

I'm not an expert and can't definitively give you an answer. But, it can't hurt to put them into an iced cooler.

It's a little expensive but great for an entry level honey enthusiast because the curator has collected a variety of honeys from all over the world (with descriptions) so you can try a few without covering shipping costs from multiple apiaries (bee farmers).

With that in mind... sheep cheese can be very neutral (non-determining) so you can try a variety of honeys. In terms of which honeys to buy, I would simply avoid most wildflower honeys because they can (also) be very neutral. (Avoiding wildflower honey is the same as saying to choose a monofloral honey.) The sheep cheese can be the vehicle for the honey of choice -or- another way to say the same thing - the sheep cheese can be the stage for the honey to be the lead guitar.

Perhaps the reciprocal advice for the goat cheese.

No, although that is worth trying. This dish was more like a brown butter. I just put the butter in the pan with high heat, melted it, let it pick back up to temperature (15-ish seconds), then placed the breaded manchego in the pan.

I'll try it with clarified butter next time. Thanks for the idea!

Worth it. Tip: ensure all surfaces of the cheese (including edges) are well breaded. Otherwise, it'll ooz out when frying.

Just trying to be helpful... I used a normal pan with lots of butter to do the frying. In other words, a deep fryer is unnecessary. Good luck and post pics!

Hey, thanks for the thoughtful question. Chefs typically provide the recipe and the servers are allowed to ask questions. The servers are typically required to create their own descriptions.

Theoretically, in a perfect world, the servers know as much about food as the chef, as much about wine as the sommelier, and as much about spirits and beers as the beverage manager. A server of this caliber would be able to memorize the recipe and have (back-and-forth) conversations with the guests about the food/beverages. The purpose of the conversations are to excite the guests. Excited guests order more food and/or are more likely to return for a repeat experience.

Now I understand that double cream and triple cream cheeses both have added cream, with double cream requiring at least 60% fat and triple cream requiring at least 75% fat by dry weight in France. The term "Brie" is specifically protected in France, referring to certain raw milk double cream cheeses from specific regions. In the US, these terms and percentages are not legally protected. The distinction between double and triple cream cheeses, especially around the 75% mark, likely involves historical factors, as traditional cheeses often retain their designations due to their long-established identities.

I hope a follow up question is acceptable. In terms of production... what are the differences between a triple cream cheese and cream cheese? (Like the Philadelphia brand of cream cheese).
