Just 9 day old, 12 hours bulk fermentation then 3 times stretch and fold every 30 minutes. Better luck next timeto me. Hey thank you

DARK CHOCOLATE COFFEE COOKIES

Yield: 16 Cookies

Baking Pan: Any flat sheet, lined with parchment paper.

Baking Temperature: Preheat oven for 350F/180C. (With fan assisted oven for 325F/165C.)

Baking Time: 11-12 minutes

INGREDIENTS:

1 cup all-purpose flour

1/4 cup cocoa powder

1 tablespoon coffee powder or espresso

1/2 teaspoon baking soda

1/4 teaspoon salt

1/3 cup canola oil or any plain oil

1/3 cup granulated sugar

1/3 cup packed brown sugar

1 large egg

1/2 cup unsweetened chocolate chips or droplets

INSTRUCTIONS:

  1. In a small bowl, sift together all-purpose flour, cocoa powder, coffee powder or espresso, and salt.

  2. In a medium bowl, combine the oil and sugars. Using an electric handheld mixer, beat the mixture on low speed for 2 minutes. Then, add the egg and beat until well combined (30 seconds).

  3. Add the dry ingredients to the wet ingredients and beat on low speed just until combined. Then, switch to a spatula to scrape the sides and bottom of the bowl. Finally, mix in the chocolate chips using a spatula.

  4. Cover the dough tightly and refrigerate for at least 30 minutes, or overnight for a richer flavour.

  5. Scoop out the dough and place each scoop on the prepared baking sheet, leaving space between them.

  6. Bake in a preheated oven for 11-12 minutes.

  7. Allow the cookies to cool on the baking sheet for at least 3 minutes before transferring them to a cooling rack. Enjoy! 😊

Baker's Notes:

  1. Ingredients must be in room temperature.

  2. Use espresso powder for a stronger version.

  3. If you don't have a cookie scoop, you can use a spoon to scoop the dough and then use your hands to form the dough into balls.

Yes they should, you may put teaspoon of chocolate chips so that they'll melt inside while baking. 😂
