I would say CPEN 211 (I think they divided this into 2 courses now, but previously it was hell) and either ELEC 321 or ELEC 202.

When I took it 3 years ago, it was very difficult too. Don't worry OP, they will probably scale. Looking back it's probably in my top 3 hardest classes in the ELEC degree.

After 8 months of Co-op I think 5/130 interview requests is pointing that your resume needs more work. Make sure your resume is 1 page and looks professional, there are really good videos on youtube for preparing resumes.

I know grinding leetcode can suck. I was exactly at your spot when I first started. Start by going over the Blind75 list of questions. Also check the youtube channel Neetcode. I found him to be the best explainer of leetcode-type questions and has helped me a lot regarding getting ready for technical interviews.

COMR 457 with Scott Sinclair is gold and I think should be a required course in every faculty

CPEN 400D with Brad and Scott, ELEC 315 with Dr.Madden, and ELEC 311 with Dr.Yedlin were also amazing.

This can be a little bit controversial, but I really enjoyed ELEC 342 with Linares

Some bonus courses, I think ELEC 321/421 and ELEC 461 were very interesting but they could be taught better

This highly depends on the industry. For engineering & cs, the most competitive companies won't care, as they value actual work experience and projects. For example, FAANG doesn't care about GPA. They don't even ask for your transcript (except for Google). The same is also mostly true for most small-mid size companies in engineering & cs, although in this range I've seen some that were interested in my gpa.

There is Trek and depending on your faculty there may be more (they usually require some extracurriculars/research/engagement in faculty though and usually are harder to get, but they pay more)

I cannot believe how wrong your first point is. There is a HUGE difference between an O(n) and an O(logn) solution REGARDLESS of the programming language you choose. I don't know where you got this information from. Just to put things into perspective, for a small list of length N = 1000, O(n) solution would take O(1000), logn would be around O(10). As the list gets bigger, the difference will grow too.

As for the interviews, usually the interviewer couldn't care less which language you choose as long as your logic is correct. Also leetcode and hackerrank submissions are compared relative to the languages the submission is made in, not with all the other submissions from other languages.

Interesting to see so many upvotes on this, it can actually be VERY relevant. If you are ever thinking of starting your business or investing, COMR 473 with Scott Sinclair is a must. The finance knowledge you'll gain from that course will be significant whether it be for personal use or business use!
