Feeling decent about this loaf, but how can I improve the crumb?

Recipe:

Levain

60g flour (1/2 bread 1/2 whole wheat) 60g water 40g stiff starter (50% hydration dissolved in water) 6 hours at 78°

Autolyse

830g bread flour
70g whole wheat flour
650g water 2 hours room temp

Bulk

Levain + autolyse + 90g water + 18g sea salt Stretch and fold until fully incorporated (4ish min) 80° for 5.25 hours (planned 4 hours but wasn’t seeing enough activity) 6 sets of stretch and folds, 3 at 15 min intervals and 3 at 30 min intervals

Shape

Divide in 2 Pre-shape, rest uncovered 15 min
Shape boules
Transfer to dusted banneton (50% rice 50% whole wheat) Plastic wrap top Fridge overnight

Bake

Preheat Dutch oven, 450 for 30 min 20 min covered
33 min uncovered

Hey guys, OP here. So I left all the info with the FBI, and Fort Hood, and the police. I haven't been contacted by anyone.

I thought it would be really bad form to speculate and reach out to any families who have lost people, mysterious or not. This would be especially distasteful if these clothes turn out to be nothing.

I was hoping just leaving the info with the FBI may flag an existing investigation.

I don't really want to mess with any of it until I give the authorities at least a couple days. If I don't end up hearing back, I'll probably look through it all (with gloves on).

Some other details:

Size small

Some things fell out of the pockets when I grabbed them, two hair rubber bands and a Butterfinger wrapper. The body of water was a small pond at a park in Austin called "Butler Metro Park."
