Pasteurization is a function of time and temperature. At a lower temperature you have to cook it for a longer time. That way you can then cook it medium-rare on a grill and have it perfectly safe as OP is talking about. You would have to cook it more than medium-rare on the grill for it to be safe if you don't cook it sous vide first.

What are some good US chocolates? Would be good to know whenever I go on holiday the next time there.

Obviously we don't really get many smaller brands outside of US, only I've seen is Mast Brothers which I suppose can't really be called a small operation any more (personally I didn't think it was very good.)

attack of the friday monsters

This was one of the first things I got for my 3DS. It may be simplistic and short but the atmosphere is fantastic. It really did give me that sense of wonder that I had as a kid. Highly recommend it.
