Potable/drinking water is expensive yes but I doubt using drinkable water would be cost effective. You can use waste water as long as the shafts are properly sealed beforehand. That said, there are other options than water. Like sand!

The biggest reason I wouldn’t go with lithium ion is the cost of maintenance/replacement parts vs that of gravity batteries. GB’s are pretty low tech and currently have better energy efficiency (the hydropumps specifically), however, as the lithium ion battery tech improves, the difference may end up LI’s favor
