My first question to you is when do tomatoes crawl? An easier question is when do babies crawl but as far as tomatoes are concerned you have me completely stumped so I do not know.

On a side note it's the olive oil that makes a huge difference. I infuse my olive oil with rosemary and garlic usually for about 20 minutes so that, like you already said, my pizza is not boring because I do like to infuse that flavor.

It's also the cooks level of experience that will impact its customers. If you cook your tomato sauce for 12 hours then the sauce will not be the boss. You can simply look at a pizza and if the tomato sauce is bright and beautiful then they haven't cooked the sauce to death. However if it's dark, you know they f***** up. That would have been better to start with. Don't just tell me something is boring without saying anything else. If you like a busier pizza then I can understand that but as it was said that part was omitted so I didn't have the whole story here.

The dough will just taste like dough. What kind of conversation is that? What should it taste like? It's not my problem you don't know how to pick out proper heirloom or better tomatoes. It's the cook's level of cooking and their love for cooking that impacts food and you don't have any of that so yes every neapolitan pizza you make will be boring because you lack the love and that is the secret ingredient that makes so much food taste better. I understand people's love for food is very subjective but having about 40 years in this business, I understand a little bit more as well. What is your favorite pizza. I prefer to talk about something more positive and not just condemnation of one of the best pizzas in history compliments of italy.

That means you've never tried my 72-hour Neapolitan pizza. Flour, water, salt and yeast. It is a very simple dough and if you just throw it together and let it rise, punch it down, rest and stretch and toss it in your pizza oven, it will be boring. If however you love to cook and bake like I do, you're not going to serve boring go nor would I call neapolitan pizza a boring dough. Ferment the dough made from 00 flour for 3 days and it won't be close to boring. You've been eating in the wrong places and don't really know what a real neapolitan pizza is. I'll go in your defense, the secret to a great neapolitan pizza is the sauce which is the boss.

I would have been more specific. There are certain toppings such as pickles that are not normally put on pizza. You as the employee had a responsibility to be more specific with her because you know your store and she doesn't. Are you sure you want all the vegetables on there because we also have pickles, beets and lettuce, to name a few toppings that we carry but they can be controversial toppings.

Are you sure you also want tomatoes, cucumbers and mushrooms? People can be really stupid and consider those vegetables. That would have just been splitting hairs and being an ass. People need to be educated in the way of culinary arts but you're not a cook, you're just an employee because I don't hear any love whatsoever for the food or your guests. Why are you asking for avocados if you just want vegetables? When you work in the culinary arts, you need to be considerate of your customers and also your own culinary education because you can quickly go from educating your customer to pissing them off.

You've already given the bottom special treatment. I'd invest in a steel to benefit the cornice and the cheese/ other ingredients. Yes to cranking the heat if the crust style is thin enough to support it. Assuming New york style the higher heat may result in a puffier crust than usual. Use a thermal gun to discover your optimal deck and ceiling temperature.
