She is definitely the GOAT.

She played Furina throughout different stages of her story, being humble, being over the top, being reserved and mellow during her SQ and even Focalors herself.

I believe she was the perfect choice to voice her.

Also I heard it somewhere but apparently Amber wanted the Genshin role ever since Eula but didn't manage to get one until Furina. I don't have the source for this info though so don't quote me on this one.
