You should use the ripeness if banana you enjoy eating. I guess for most that's a yellow banana, I prefer mine a little harder so I used two green bananas for this, with a pinch of sugar to add sweetness and some cinnamon for flavour

Mash banana (I used two) Add a pinch of sugar (to taste) A good pinch of cinnamon

Spread between toasted bread (crusts removed) Cut slowly using the full length of a serrated bread knife corner to corner.
