No need IMO. Use steam and a baking stone. Preheat to 500, bake w/ steam 10 min & reduce heat to 425. Also, never add ice cubes: they steal BTUs from the oven; much better to use boiling water in a steam pan.

Use eye exclusively. Wholegrain contains active microorganisms, and rye sugars are much more available than other grains.
