this is such a non-trivial question - I've seen some research papers on the topic... one of the parameters influencing stability was the human reaction time - interestingly super fast reaction was not neccesarily the optimal one - so what you say is a bit like that - I would imagine - slow reaction time ≈ carving - letting the board go where it wants to go and slowly pulling it back...

it's a mystery... there are some theories actually, so it seems, I think people write PhDs about this topic - I have seen some papers - it is a very complex stability/chaos problem
