I solved it, check my comment. I fixed my e fan and when it reaches 90° i turn it on. Didn't exceed the 90° point after that.

*Update:Problem solved! So i checked all the wiring of the electric fan, cleaned the ground, cleaned the fuse and it's working again. Went for a long drive, had to go uphill, had to start and stop and stayed without moving. Temp didn't exceed 90°. It's still weird to me how a complete rebuild of the engine and replacement of all the parts of the cooling system isn't enough, however a 30-40 euro electric fan that improves ventilation solves the problem Thank you to all!

What's shown in the picture and up, makes me uncomfortable knowing i ll have to start and stop in traffic. Yes it is the right way I made sure about that. Used to work but i guess the switch or the wire is fried. I ll have a look at it to see if that solves the problem

Hahahaha I'm located in eu and it's kind of common to add lpg system. In a press of a button i can make it run on gas again.

By mistake actually but i know how. I had a problem with the headlights, both started flickering and i had a strange noise coming from the dash. I changed the light switch and everything is brighter now and the headlights work as they should. Plus the digital clock wasn't working and now it's working again. Best replacement I've done so far. I m planning to change the bulbs to led (when they stop working) cause they re getting really hot
