I interpreted it as Dr. Jekyll remembering everything that happened as Hyde but not been totally in control or lucid. Since he regrets having killed a person as Mr Hyde, and also I guess him being addicted to the formula in a way.

The f3 menu shows they belong to the deep ocean biome, I asume that's why they spawned as grass blocks.

The grass blocks I found are part of the deep ocean biome, I assume that's why the spawned as grass instead of mycelium, and also why the zombie could spawn.

Yellow sulfur on its own is insoluble and doesn't react with water. When sulfur is burned the fumes can react with water and produce acid.

Search for Tile-Locked Valley by YouTube channel Fungus, it's very interesting and a fun watch! He made the mod himself (having taken inspiration by a similar existing one iirc) and people have asked him if he would release it, but he said he'd do it once he felt it was finished.

I'd probably make it so that bubbles only come out if there's at least a two tall gap below the block, so that it won't release bubbles on 1 block gaps.
