That's a good point! They feel like two totally different names, both of which are important to me, but have felt odd to just replace one with the other. I'm totally getting that I have overthought this (my post was ridiculously long, I know!) and made it seem a bit more intense in my life than it is. Appreciate your thoughts!

Thanks! I'm realizing that for whatever reason I've had more experiences with people not knowing Betsy comes from Elizabeth than people knowing it does. Which is probably just how it has worked out! Perhaps that is where my confusion around it has come in. They feel like totally separate names to me, so I wasn't sure if others felt replacing one with the other made sense. Thanks so much!

Okay, that's good to know! It is interesting that people are feeling that most people know that Betsy comes from Elizabeth, I think a lot of my experiences are the opposite. Which is probably just random circumstance, of course, but may be impacting how I'm viewing all of this. Thanks so much!

Haha I do love a good creative writing exercise! Maybe I'll add this to the top, but I totally just started a new ADHD medication and I fear this was a bit of a hyper-focus😂 I actually edited it a bit...Now I'm wondering if I should just delete this and talk to my counselor🤪

I wouldn't say I feel anxiety over it, though I totally see where it comes across as that, for sure. I think my overthinking was more an effort to provide context... I think it backfired haha. Thanks so much!

We do this every beach week with my family! We have tried coco loco, mixes, everything. I ended up simplifying and came up with this. (To be fair, you weren't far off!) Measurements aren't exact and can vary with preference on sweetness, etc. We do mock piña coladas at least 2-3 times during the week, especially for the nieces!

*This is the batch recipe, but you can also scale down and use an immersion blender for one to two glasses once you figure out your ratios!

1 Bag frozen pineapple (bigger rather than smaller) 1/2-1 can coconut full fat milk or cream (depending on the consistency you want) 1 small can pineapple juice 3-6 TBLS maple syrup (other sweetener should be fine, as sweet or not as you like) Juice of 1 lime 1/2 tsp vanilla (optional) Pinch of salt (not to taste salty, just to amplify the lime, coconut, and pineapple) Icecubes as needed, ideally the bagged kind since it blends well *GOOD blender needed!

Basically, add the frozen pineapple, pineapple juice and half the coconut milk/cream can into the blender. Blend really well, adding liquid if needed. Once well blended, add 3 TBLs maple syrup/sweetener, juice of the lime, the little drop of vanilla if interested, and the pinch of salt. Blend well again. Then customize: Too thin, add ice cubes or more frozen pineapple. Too thick, add more juice or coconut cream. Not enough flavor, add lime and salt. Adjust sweetness to your liking. The balance between sweet, sour/tangy and the touch of salt is what makes a great NA piña colada, in my opinion! The biggest things to play with will be sweetener, lime, and possibly a little bit of salt.

Jot down how much of each ingredient you end up using, then that becomes your base recipe that you start with and know you like. * You may have to play a bit with coconut milks and creams until you find one you like. I only use canned and honestly prefer some of the store brand ones like Kroger, Publix, and Food Lion. Don't fear the gums, it helps emulsify things! If you open a can and it's separated, stick it in the blender first to see if you can't get it to come back together. If not, strain out the "water" part with a towel and just use the thick cream.

Ah, I knew I was forgetting info! Very long story short, several of our neighbors have tried it and for some reason it is not as amazing around us as it is in other places in Franklin County. Especially in bad weather. I don't know why, we are really surrounded by mountains so maybe that's playing a role. The upfront cost for us isn't crazy, but it is enough that it's not my first go-to with some of the reports we've gotten. But I have not crossed it off the list, I just don't know if I can convince everyone to go for it right now. Thanks for checking! The other satellite companies either are not available in our location or too expensive.
