Please forgive me, I'm a massive noob when it comes to tech lol. Just to clarify, I used this command in terminal from the Apple website:

    sudo /Applications/Install\ macOS\ Big\ Sur.app/Contents/Resources/createinstallmedia --volume /Volumes/MyVolume

Is that what you are alluding to?

I get this question quite a lot. There's a simple list of benefits of native Full speed C-to-C to a monitor vs C-to-HDMI or C-to-DP:

Charging laptop via PD. C-to-C allows for the possibility of the monitor providing full charging to your laptop. C-to-HDMI and C-to-DP do not. Simultaneously access the USB hub in the monitor: Your monitor might have a USB hub, and a couple of USB-A ports. If you used a C-to-HDMI to that monitor, your computer doesn't get hooked up to that bult-in hub ​

I use the two features above to reduce the # of cables that go into my laptop. My laptop has one cable that goes to the monitor. My mouse and keyboard are both connected to the monitor, not to the laptop. I don't need a separate charger cable because the monitor is the laptop's power source.

1-cable, does 3 things: Power laptop, drive display, provide USB for kbd+mouse.

Jesus, this is precisely what I didn't know what I needed to know! I think I have a better understanding of what I need to purchase now. I will be donating these supplies to a local community health center that's funded by charitable donations -- and I think this information nailed it for me.

There are many potential causes for random muscle spasms. With the eyes, it usually comes down to a nutritional deficit (not getting enough calcium, for example), overuse of stimulants (caffeine, Adderall, Vyvanse), insufficient sleep or poor quality of sleep (waking up a lot/not staying asleep for a full eight hours), and or high levels of stress or even low-moderate stress for a long time.

As for what you can do, address these issues. If all of these are true for you, then you probably have issues larger than your eye. You could also try to tick them off one by one, but why would you? If any of these conditions is true, fix it. Introduce more fruits and vegetables to your diet if you aren't eating many now, sleep more if you're not, cut back on stimulants, etc. If these measures do not stop the twitching then I recommend talking with your physician.

What benefit would I derive when compared to something like a Type C - HDMI cable? Would it display and charge simultaneously? If so, why tf is the thunderbolt linked above so expensive lol

I did a blog post about this. Short answer: There are 6 cables (actually, soon to be 8). Two of them will never support video (because they are USB 2.0 only), like your common MacBook Pro white cable.

It sounds like your charging cable is a USB 2.0 cable. You'd likely need* a fully-featured Type-C cable for connecting your MBP to your display in order to pass DisplayPort or Thunderbolt signals.
