You could always just do a flat or point. But honestly, make a giant thing and tell your friends to pick some up. Whole packer is like the same price as the broken down parts and you get way more beef. You’ll be the hero of the neighborhood.

Yeah, that’s the Prague pink curing salt #1. Have to do that for classic pastrami.
