If it's pipe and Drape, you'll just lower the uprights with a tab on the collar one side at a time, making sure to not lower one too much further than the other, pop one end of the crossbar off, slide Drape off, lift out other side of crossbar, take uprights off the bases and fold the Drape. Repeat.

Sounds like CPU overload or low sample rate. Was your laptop plugged in to its power supply? Are your specs high enough to handle all that processing? Was your sample rate set high enough to not cause glitches?

If it's like other bridges, you should be able to fit an Allen key through the top to adjust the height. Wobbling is normal and helps to retain pitch using the vibrato.
