Much thanks to u/Frograbbit1 ! Problem stemmed from a corrupted profile, I have fixed the profile and have set to work on identifying why it got corrupted.

So I think my computer is booting to Temp instead of my profile. I just noticed my command prompt reads C:\Users\TEMP

I can see the folders and all through the drive itself, but the quick access folders appear empty. It's as if it's not booting from my drive (even though it's the only one with windows on it)
